Pecorino aged under rosemary in barriques is the result of extensive research carried out among the old shepherds of the Valdichiana, masters of cheese preservation with poor materials, giving the cheese a unique flavour and aroma.
Procedure: The cheeses are placed in oak barrels and kept at room temperature. They are layered together with the material in which they are ripening. The small cracks between the barrel planks allow the air to gently penetrate inside and create a perfect microclimate for the ripening of the cheese. When the cheeses reach perfect ripeness, they are placed in crates, presenting an irregular shape, but the aroma and intensity of flavour makes each cheese unique.
Pairings: Ideal with structured red wines, dark beers, cured meats with an intense and strong flavour, perfect with artisanal compotes or honeys of all kinds.
