Pèppoli Oil
This oil, from Tenuta Pèppoli is produced with organically grown Frantoio, Moraiolo and Leccino variety olives, harvested by hand and pressed a few hours after picking, using typical stone mills. It has an extraordinary organoleptic personality, excellent structure and balance, with a typical and pronounced final spicy note.

Provenance
Tenuta Pèppoli is located in the Chianti Classico area, in the municipality of San Casciano Val di Pesa, at an altitude of 300 - 350 meters above sea level. The estate has a total area of about 100 hectares, 27 of which are planted with olive trees. The soils are composed of marine deposits of the Pliocene era.

Historical Data
Pèppoli Oil is an organic oil. In 1994 the estate adhered to the Organic cultivation project, according to which synthetic chemical principles are totally excluded for both pest control and fertilization. After the "Conversion" period of two years, provided for by current legislation and under the control of the Consortium for the Control of Organic Production, a body authorized by the Ministry of Agr. and For. Resources, with the 1996 production it was possible for the first time to obtain the "Organic Certification" of Pèppoli Oil.

Harvesting and Production Process
The olives, which come from the appropriately selected olive groves, are harvested exclusively by hand at an early age with respect to full ripeness and are sent for pressing strictly within 12 hours of their arrival at the mill. The processing cycle, after the leaves have been removed by means of a defoliating machine, involves hammer crushing; the paste thus obtained passes to the kneading machine, where, at a temperature of between 20-22 °C and for a period of time varying between 10 and 15 minutes, the oil particles aggregate with each other; they thus begin to separate from the paste and then proceed to the actual extraction phase through the decanter. The process then takes place at low temperature, without the addition of water, to enhance the aromatic and organoleptic characteristics. Preservation takes place in small stainless steel tanks, under an inert gas atmosphere and after careful farm selection aimed at enhancing quality. Pèppoli Oil is bottled in the company's oil mill in 0.500-liter and 0.250-liter formats.

Organoleptic Characteristics of the Oil
Olio Pèppoli has a bright green color. The nose is intense, fragrant and pungent. On the palate it is lively, fruity, harmonious, and shows good structure and balance, with a typical spicy note on the finish.

Pèppoli Estate
Tenuta Pèppoli is located five kilometers northeast of Tenuta Tignanello and covers a total area of 100 hectares, 50 of which are planted with vines, from which Pèppoli Chianti Classico DOCG is born. Tenuta Pèppoli, in keeping with tradition, also produces the eponymous Extra Virgin Olive Oil and Pèppoli Red Wine Vinegar, produced by transforming Pèppoli wine into vinegar.
