Peppoli wine vinegar is derived from the complete acetification of Peppoli wine. The base wine was acetified in 50 Hl wooden vats and in 225-liter oak barrels. The initiation of 'acetification took place in the vats in a "slow by submerged culture" manner and ended in a "static in the barrels" manner. The obtained vinegar further rested in the kegs for 24 months. The "slow" acetification first and "static" later allows to respect all the aromatic richness of the starting wine. The subsequent aging phase allows the "sublimation" of the tertiary olfactory notes that overpower and complex the simpler notes due to acetic fermentation, typical of young vinegars.
Tasting Notes
Appearance: clear, bright, garnet red color with amber highlights. Smell: persistent acetic with notes of roasting (coffee, nuts). Taste: high acidity typical of the Sangiovese matrix balanced by the softness obtained thanks to long maturation.
