Why it’s so delicious?

The Scaturchio Pastiera is a classic. The recipe dates back to 1905, and since then master pastry chefs have faithfully executed it always in the same way: shortcrust pastry, cooked wheat, a skillful blend of various flavorings, and two sheep's milk dairy products of the highest quality: ricotta romana and ricotta sarda.

The process of making it is long and labor intensive, but necessary to achieve the creaminess and delicacy that make it unique.
