Why it’s so delicious?

Bagoss is a semi-fat, extra-hard cheese. It is named after the citizens of Bagolino, the Bagoss.

It is made with raw milk of the vacca bruna alpina, a local cow breed of the Alpes area.

During the milling, the cheesemaker adds saffron, which is the distinctive characteristic of Bagoss cheese.

It is a noble cheese and it can reach 20 kg or more of weight.

During the ripening, the Bagoss starts to develop a spicy taste and a yellow colour. 

fter the basic ageing, its texture becomes granulated and starts cracking. This cheese is part of the Slow Food certification.
