Why it’s so delicious?
Caciocavallo aged 3 years. Characterized by an extraordinary piquant, assertive flavor and a firm, robust texture, it is highly valued by gourmets.
Perfect grated, flaked or at the end of a meal, it goes well with full-bodied red wines.
The process of making Caciocavallo del Duca is similar to that of our younger caciocavallo cheeses, and begins with a careful and scrupulous selection of the best cow's milk from the Murgia, delivered very fresh, and immediately used in processing.
The process follows a strict production procedure in respect of a very ancient tradition, and ends with a careful aging phase that lasts a full 36 months. Given the high consistency of the cheese, it is opened and sold in trays in pieces.
