Produced by the Pioggia dairy in the heart of Apulia, using strictly artisanal techniques in keeping with Apulian tradition, we have made this splendid caciocavallo, rich in rustic aromas and a flavorful aftertaste.
Cheeses that today we consider authentic delicacies were born from the 'need to preserve surplus production for a long time. Placed under hay they kept for a long time, protected from insects and acquiring-most importantly-an intense flavor and unmistakable aroma
In particular, it was the finer strands of hay that were able to impart a more pronounced flavor and greater softness to the dough (hay allows it to retain more moisture).
Hence an absolute novelty was born! A caciocavallo barricaded in hay, with a strong, rustic flavor, made with the best fresh milk.
