Caciocavallo SIlano is an uncooked pasta filata cheese, the production of which takes place - in the present day - almost exclusively using cow's milk: as an alternative to the latter, but to a distinctly limited extent, buffalo milk is used. What immediately distinguishes this cheese from many other equally famous dairy products is certainly its shape comparable to that of a pear.
