GOURMET CHARACTER
Assemblage Champagne this one, marrying the finesse and elegance of Chardonnay (85 percent present) with the deeper, darker tones of red wine from Pinot Noir grapes, which also lends the color charge. After a manual harvest, the grapes are brought to the winery and carefully sorted: only the best will be designated to become Premier Cru Brut Rosé. The traditional vinification takes place in steel tanks and, once finished, malolactic fermentation is carried out and then triggers refermentation in the bottle, thanks to selected yeasts, for a period ranging from 30 to 36 months. The result is a Champagne with an absolutely gourmet character that, precisely because of this characteristic, finds a place in the most varied drinking occasions.

A delicate and bright salmon-pink color, it envelops the nose with notes of fresh small berries, particularly raspberry, currant and strawberry, followed by more youthful and sweet notes of must and a floral reminder of red roses and geranium, all without neglecting the citrus vein of pink grapefruit and tangerine. Fleshy tasting, it stands out for its balance between creamy fruit and pungent effervescence, propelled by spice that leads back to pink pepper and cinnamon and culminates in crystalline savoriness.

Wonderful with hors d'oeuvres in general, both seafood and land, it is perfect with shellfish but also next to tomato dishes. Try it with ricotta and spinach ravioli or with agnolotti with sauce; it can even be thought of alongside a berry tart.

The Winery

Autréau de Champillon: an unmistakable style.
The Autréau family's Domaine is located in Champillon sur Marne, a small village 5 km from Eperany on the road to Reims and overlooking the Marne Valley, offering one of the most typical and striking views in Champagne. The family itself gave birth to the Domaine in 1670 and, to date, can boast 30 hectares of vineyards divided between the best crus of the Côte des Blancs and the Vallée de la Marne.
