Why it’s so delicious?
l Bread is the most widely consumed baked product but very few bakers manage to produce high quality bread. This of course starts with the choice of durum wheat semolina and if you add to this that the yeast is mother yeast and the baking is done in a wood-fired oven then you can understand that we are talking about a baked product that is now dying out.
Where do we get it and why?
We get it from Giovanni, a second-generation baker in Corleto Perticara. He uses remilled Lucanian and Apulian durum wheat semolina, sourdough and a wood-fired oven. The bread produced if well stored can have a shelf life of 10 days.
