Why it’s so delicious?
Montasio Mezzano DOP is a table cheese typical of the Friuli Venezia Giulia region and northeastern Veneto. The production area of Montasio cheese thus includes two regions: Friuli Venezia Giulia, in the provinces of Udine, Pordenone, Gorizia and Trieste, and Veneto in the provinces of Treviso, Belluno and partly in those of Venice and Padua.
It is characterized by a cooked, semi-hard paste that is compact, straw-yellow in color with regular, homogeneous eyes and a grainy, crumbly texture. The rind is smooth, elastic and compact, light brown in color.
Montasio Mezzano is aged for a period of 4 to 10 months and has a stronger, fuller flavor.
It is made exclusively from fresh raw cow's milk from the production area. Collected from two different daily milkings, with subsequent spannatura of the evening milk, this milk is processed into cheese using soft techniques that respect the original microbial and bacterial flora.
In fact, a low-acid graft obtained by fermenting the milk after low-temperature pasteurization is used to guide fermentation.
Use in cooking
An extremely versatile cheese in the kitchen, Montasio Mezzano DOP lends itself well to many combinations.
It is perfect, for example, to accompany bread, salads, trifle vegetables, savory strudels, timbales and vegetable pies.
It is also a table cheese to be eaten alone, with bread or with some raw or cooked vegetables.
It goes nicely with polenta or fine meats. The recommended pairing is with white wines such as Merlot.
