Why it’s so delicious?
From the relentless research that has always distinguished Marolo for the most unique distillation techniques and methods, Marolo's new Solera Grappas are born.
The Solera method, which is very popular in the production of Rum, consists of creating a particular blend of grappas aged in barrels with different ages of aging. The barrels are ordered in pyramidal stacks: the top row contains the youngest grappa while the bottom row, called Solera (from the Spanish for "soil") contains the oldest. Each year a portion of the Solera is bottled and the barrels are refilled with the distillate from the top row.
The nose presents aromas of white flowers and yellow-fleshed fruit. The mouth opens with sensations of apricot, candied citrus and light notes of pear, complemented by nuances of rose and elderberry, with a in the finish of dried fruit and almond.
It is Paolo Marolo who skillfully directs the work of distillation and harmonizes it with technique and passion. His grappas were born in 1977 and, from a traditional product, have become a product of excellence. Since then, pomace from noble vines has been transformed into distillates that testify to a great faith in nature and its rituals.
Today's distillery is concrete evidence of how Paolo Marolo has been able to combine artisanal and traditional techniques with modern equipment. With this spirit, Grappa Marolo is constantly looking for new guises for its products, inspired by the classic bottles with labels designed by master distiller Gianni Gallo, which helped create the distillery's history.
