Why it’s so delicious?
A surprising thing, just like in life, is that sometimes the finest things come from what we refer to as "scraps". It is a well-known fact that nothing goes to waste in pork butchery, and so it was that in Medieval times, fat drippings were heated on a low flame and flavoured with spices, becoming a typical element of Umbria's gastronomy tradition.
Le Greppole / Ciccioli is a unique and traditional street food in Italy that, in the peasant tradition, was an excellent meal in conjunction with polenta. Now they are mostly used to accompany appetizers and entrees.
They are processed from pork lard and then fried and seasoned. They can be used as a delicious snack to enjoy with friends or for gourmet preparations.
