Why it’s so delicious?
Sausage must be made of ground pork, salt and pepper.
To the taste of the pork butcher, garlic and/or wine can sometimes be added. We at Macelleria Pucci for example like to put in a zing of fresh garlic because we like the aroma it leaves without weighing down breath and digestion. We use whole-grain sea salt and choice pepper. Stop. And honestly it is one of the best sausages we have ever had, we are so proud of it!
Salt is a natural preservative, and we have been making our sausages the same way for fifty years, sometimes with variations (spicy with pepper or with fennel seeds), but the base is always the same.
We use pork from local farms, which we slaughter in the abattoir in Terni, so we personally follow the whole process from start to finish.
We put in scraps from hams, steaks, bacon, but also shoulder meat.
Once the fresh sausage is prepared, it is moved to the curing cell where it reaches its perfect dryness, which is neither too soft nor too tough.
