Riserva di mare wholemeal salt is a Slowfood presidium recognised in Italy for its organoleptic properties and method of extraction. As the Phoenicians did, in the salt pans on the coast of Trapani, the salt is still harvested by hand and left to dry in the Sicilian sun and wind, without washing, bleaching or mechanical drying. The result is a salt with a more intense taste, which allows a reduced use of the product, and therefore healthy.
