Fir Tree Honeydew by Mieli Thun has a very dark color that tends to lighten in the crystallization phase. It is characterized by a strong smell of fir resin, barley, candied citrus peels and rare smoky hints. On the palate it is moderately sweet, with notes of malt and caramel. Try it served on lard and fatty cured meats or simply accompanied by a slice of black bread and alpine butter. Also perfect melt with lemon juice for small fruit salads or emulsified with extra virgin olive oil to flavor duck breast.
