Tasting notes
Saffron Goat's Matrioska is a cheese composed of two different cheeses: the outer part is a presamic curd, while the heart is a lactic curd produced with the addition of saffron.

The result is a cheese that is pleasing to the eye and to the taste, as well as giving a pleasant tactile sensation when tasting due to the different consistency of the two pastes.

The outside has a soft, white and grey rind, covered with penicillium candidum. On the inside, the formaggella envelops the paste of the fresh goat's cheese, which is more crumbly and rough, with a deep straw-yellow colour due to the saffron.

The aroma is delicate, of fresh milk, wet grass, mushrooms and a slight animal note. From the outside, the saffron is not perceived, while on sniffing the heart it is well present and characterises the whole aromatic complex of this cheese.

On tasting, the first impression is pleasant due to the double paste that stimulates the senses. The prevailing flavours are sweet and acid, with an evident salty note and absent bitterness.

Saffron is also characteristic retronasally and is of medium-low intensity. It goes very well with the lactic and animal notes of the cheese, again of medium-low intensity.

The final balance is very successful. In addition to the double texture of the paste, the clean mouthfeel at the end of the tasting is striking.

Matrioska di capra allo zafferano (goat's cheese with saffron) is produced by Valentino Ruggeri, from Zogno, at the foot of the Brembana Valley.
