Nostrano Valle Imagna Cheese is made from raw cow's milk, has a semi-cooked paste and is matured for about 6 months.
The paste of this cheese is a deep straw yellow.
Its aromas are of medium intensity and are balanced and complex. The first impact is vegetal, with a scent of hay and fermented grass, followed by rennet and meat broth, with hints of exotic fruit and lemon.
In the mouth, lactic aromas of sour cream, melted butter and cooked milk are added. A slight pungency accompanies the taste of this cheese, which is soluble and slightly sticky.
Producer
Producing this Valle Imagna Nostrano cheese for Paganì Antichi Sapori is Casera Monaci, which uses milk from various producers in the Brembana and Imagna Valleys to make an excellent cheese at its premises in Almenno San Salvatore, at the very foot of the Imagna Valley.
Curiosities and combinations
Nostrano Valle Imagna Cheese is matured partly by the Casera Monaci and partly in our mountain cellar to reach the optimal maturation of about 180 days
The ideal combination for this Valle Imagna Nostrano cheese is with polenta from Bergamo. It is also often recommended for making polenta in combination with a sweeter cheese.
