A cheese with a strong flavour and complex aromas. Of the various ripenings, it is the richest in nutrients and is characterised by high digestibility.
The paste is particularly dry, crumbly and grainy, also very suitable for grating. The white colour is typical of Parmigiano Reggiano di Montagna, produced from the milk of cows reared in the mountains and fed with uncontaminated fodder.
Our Parmigiano Reggiano is produced exclusively in mountain areas, uncontaminated and far from smog, at an altitude of 850 metres.
Parmigiano Reggiano di Montagna, to the eye, is distinguished by a whiter paste. This valuable characteristic derives mainly from the fodder harvested, and therefore consumed by the cows, in unspoilt mountain farming areas, far from industry and pollution.
The result is therefore a highly genuine and healthy cheese with a taste that is more savoury and sweet at the same time, fragrant and with a maturation that lasts over time. This is why the link between Parmigiano Reggiano and the land where it is produced is so important.
