It took us about 65 years to find a true, imported Provolone that was consistently sharp and delicious. We had to make it our house Provolone, and since the mid '90s, this has been our best seller. From Lombardy, it is always sharp and slightly oily, but, unlike most Provolone, it is about more than the bite. The bold flavor lingers on the palate long after consumption, and as far as pairing cheeses with cold beer and football, nothing beats this Provolone.
