BALSAMIC VINEGAR OF MODENA
It has two designations to testify to the quality of this product. There is Balsamic Vinegar of Modena PGI and Traditional Balsamic Vinegar of Modena PDO. The production of both is regulated by strict specifications, which identify them as an expression of a territory, an excellence of Italian gastronomy, namely Emilia Romagna. To obtain certification, production can only take place in two locations: the province of Modena and Reggio Emilia.
PGI means "Protected Geographical Indication" and is a mark awarded by the European Union to products whose quality depends on geographical origin and at least one of the production steps must take place in the territory in question. So when you see a PGI product you can tell that it has a close connection with its territory.
