Why it’s so delicious?

Stelvio DOP is a traditional cheese from the mountain farms of South Tyrol. Its yellow-orange rind, white paste tending to yellow, and irregular eyes with medium-sized holes make it an unmistakable cheese. The texture of the paste is elastic and slightly malleable. Maturing for at least 60 days, Stelvio PDO has a strong, spicy aroma that shapes an intense and convincing flavor. Lactose-free.

Regarding cheese production, the use of typical indigenous microflora (mixed culture composed of Arthrobacterium ssp., Brevibacterium ssp. and other aerobic strains) allows for a typical ripening stage that uniquely characterizes the finished product. During ripening, the cheese is washed at least 2 times a week with aqua and salt. The composition of this mixed culture is unique and exclusive and is produced in the dairy following a defined and special procedure. Cultures are grown on special substrates at room temperature and under certain light conditions. The duration can be variable, depending on the achievement of a set pH value and the color of the culture. The laboratory technician decides based on his or her experience and acquired sensitivity when the culture is ready for use.

These bacteria give the product a unique and typical taste due to their physiological activities such as protein breakdown and the development of various aromatic substances.
