What makes Tortellino Classico with meat so special?
The main product of our production is the handmade Tortellino Classico Italiano alla carne. What makes it so special, besides the craftsmanship in making it, is the very light sheet of egg pasta with a delicate filling of selected meats.
Flour and eggs are used for the pastry. The eggs are mixed with the flour until a soft dough is obtained. The resulting pastry is rolled out very thin and cut into small squares. Beef, pork, chicken, natural flavourings (onion, carrot, celery and rosemary), breadcrumbs and red wine cooked together are used for the filling. After cooking, everything is minced and mixed with breadcrumbs until a soft mixture is obtained. The resulting filling is placed on the small squares of pasta sheet, which are then sealed. The tortellini are then left to rest until the dough is dry.
To be eaten, they are either cooked in meat broth and served with it or enjoyed dry with butter and sage. A sprinkling of parmesan cheese ahould not be missing.
